This refreshing recipe is perfect for those unfinished open bottles of white wine you have chilling in the fridge. You'll need to start this recipe 3 days ahead.

Ingredients (7)

  • 1/2 cup (125ml) vodka
  • 1 lemongrass stalk, white part only, chopped
  • 1 tsp caster sugar
  • 1 large ripe kiwifruit, peeled, plus extra, sliced, to garnish
  • 300ml white wine
  • 25ml sugar syrup (see recipe notes)
  • Ice cubes, and soda water (see recipe notes), to serve

Method

  • 1.
    To make the lemongrass liqueur, add vodka and lemongrass to a jar. Seal and store in a cool place for 3 days. Strain through a fine sieve, discarding solids, and add sugar. Stir to dissolve.
  • 2.
    Place kiwifruit in a small food processor and whiz until smooth. Strain through a fine sieve into a jug, discarding solids.
  • 3.
    Place lemongrass liqueur, kiwi juice and remaining ingredients in a jug. Stir to combine. Refrigerate until chilled.
  • 4.
    When ready to serve, pour over ice cubes and top up with soda water for fizz. Garnish with extra slices of kiwi.

Recipe Notes

To make your own sugar syrup, bring equal weights of water and caster sugar to the boil, stirring until sugar dissolves. Cool before using.

You can also use a soda machine to add fizz to the kiwi spritz, instead of adding soda water (it will be stronger in alcohol and flavour). You’ll need to make a double batch to have enough for a standard soda machine bottle.
