Ingredients (12)

  • 2 tbs extra virgin olive oil
  • 1 onion, finely chopped
  • 1kg good-quality beef sausages, casings removed
  • 2 tbs tomato paste
  • 200g crushed tomatoes
  • 2 1/2 tbs za’atar
  • 250g natural yoghurt
  • 2 1/2 tbs finely chopped mint, plus extra to serve
  • Zest & juice of 1 lemon
  • 4 x 24cm pita bread
  • Roasted pine nuts, to serve
  • Lemon cheeks, to serve

Method

    Heat a large non-stick frypan with the oil over high heat. Add onion and cook, stirring occasionally, for 4-5 minutes until onion has softened. Add the sausage meat and cook, breaking up the meat with a wooden spoon, for 6-8 minutes until the meat is cooked. Stir through tomato paste, crushed tomatoes and za'atar. Cook for a further 3-5 minutes until thickened. Set aside to cool completely.

    Meanwhile, place yoghurt and mint in a bowl with the lemon zest and juice. Season to taste and stir to combine. Set aside.

    Preheat the oven to 240°C. Grease 4 large oven trays and line with baking paper. Spread cooled mince mixture over the pita bread, making sure you go all the way to the edges. Place on prepared trays. Using 2 trays at a time, bake for 12-15 minutes until bread is lightly golden. Remove from the oven and place on serving platters. Drizzle with minted yoghurt and sprinkle with roasted pine nuts and extra mint. Serve with lemon cheeks alongside.
