Use seasonal produce to add some zing to your traditional roast potatoes.

Ingredients (7)

  • 1.5kg yellow-fleshed potatoes (such as Nicola or Anya), chopped
  • 2 bay leaves
  • 2 lemons, halved, thinly sliced
  • 1/4 cup (60ml) lemon juice
  • 2 tablespoons walnut oil or extra virgin olive oil
  • 1 teaspoon dried oregano
  • Roughly chopped flat-leaf parsley leaves, to garnish

Method

  • 1.
    Preheat the oven to 180°C. Line a large baking tray with baking paper.
  • 2.
    Place all ingredients, except parsley, in a large bowl and toss to combine. Place on prepared tray in a single layer. Bake for 40 minutes, turning once or twice during cooking, until golden and tender. Sprinkle with parsley before serving.
