Lemon roast potatoes
Use seasonal produce to add some zing to your traditional roast potatoes.
Ingredients (7)
- 1.5kg yellow-fleshed potatoes (such as Nicola or Anya), chopped
- 2 bay leaves
- 2 lemons, halved, thinly sliced
- 1/4 cup (60ml) lemon juice
- 2 tablespoons walnut oil or extra virgin olive oil
- 1 teaspoon dried oregano
- Roughly chopped flat-leaf parsley leaves, to garnish
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Preheat the oven to 180°C. Line a large baking tray with baking paper.

2.Place all ingredients, except parsley, in a large bowl and toss to combine. Place on prepared tray in a single layer. Bake for 40 minutes, turning once or twice during cooking, until golden and tender. Sprinkle with parsley before serving.
