Crisp filo tart with chorizo, saffron-poached tomato and Persian feta
A vibrant starter to kick off a fresh food medley with friends.

Ingredients (9)

  • 4 sheets filo pastry
  • Olive oil spray
  • 3 eggs
  • 3/4 cup (185ml) thickened cream
  • 1 garlic clove, crushed
  • 100g feta cheese, crumbled
  • 2 teaspoons chopped thyme
  • 2 spring onions, finely sliced
  • 8 vine-ripened cherry tomatoes

Method

  • 1.
    Preheat oven to 180°C. Grease 8 holes of a 12-hole muffin pan.
  • 2.
    Place 1 sheet of filo pastry on a board and spray with a little olive oil. Place another sheet on top and repeat, spraying oil between each layer of pastry until all sheets are used.
  • 3.
    Cut the filo stacks into 4, widthways, then across the centre to give 8 squares. Press a filo square into each of the greased holes in the muffin pan.
  • 4.
    In a bowl, beat the eggs with the cream to combine.
  • 5.
    Add the garlic, feta, thyme and spring onions, then season to taste with salt and pepper.
  • 6.
    Pour the feta mixture into filo cases and top each with a cherry tomato.
  • 7.
    Place in the oven for 15-20 minutes or until the filling is set and pastry is golden brown. Serve hot or cold.
