A vibrant starter to kick off a fresh food medley with friends.
Ingredients (9)
- 4 sheets filo pastry
- Olive oil spray
- 3 eggs
- 3/4 cup (185ml) thickened cream
- 1 garlic clove, crushed
- 100g feta cheese, crumbled
- 2 teaspoons chopped thyme
- 2 spring onions, finely sliced
- 8 vine-ripened cherry tomatoes
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Preheat oven to 180°C. Grease 8 holes of a 12-hole muffin pan.

2.Place 1 sheet of filo pastry on a board and spray with a little olive oil. Place another sheet on top and repeat, spraying oil between each layer of pastry until all sheets are used.

3.Cut the filo stacks into 4, widthways, then across the centre to give 8 squares. Press a filo square into each of the greased holes in the muffin pan.

4.In a bowl, beat the eggs with the cream to combine.

5.Add the garlic, feta, thyme and spring onions, then season to taste with salt and pepper.

6.Pour the feta mixture into filo cases and top each with a cherry tomato.

7.Place in the oven for 15-20 minutes or until the filling is set and pastry is golden brown. Serve hot or cold.
