Make this traditional Christmas maple-glazed ham recipe that comes with a summer twist part of your Christmas menu this year.

Ingredients (6)

  • 4-5 kg whole leg ham on the bone
  • 30 cloves
  • 1 1/4 firmly packed cups (250g) brown sugar
  • 2 teaspoons mustard powder
  • 1/4 cup (60ml) verjuice (see note)
  • 1/4 cup (60ml) maple syrup

Method

  • 1.
    Preheat the oven to 180°C.
  • 2.
    Remove the skin from the ham, leaving the fat on. Score fat in a diamond pattern, then press 1 clove into each diamond.
  • 3.
    Sit the ham on a rack in a large roasting pan. Fill pan with 3cm warm water (this will prevent glaze from burning as it drips).
  • 4.
    Combine the brown sugar, mustard powder, verjuice and maple syrup in a saucepan over low heat, gently whisking to dissolve the mustard.
  • 5.
    Brush some glaze over ham and bake for 45 minutes, basting 4 or 5 times with remaining glaze, until heated through and glazed. Rest for 20 minutes before serving.
