Mixed greens salad with tarragon dressing

Add a pop of fresh to any feast with this green mixed salad. It's all dressed to impresses with a delicious tarragon finish.
Ingredients (6)
- 150g sugar snap peas, trimmed, strings removed, split open in half
- 4 bunches asparagus, trimmed, peeled into thin strips (we used a mandoline)
- 2 little gem lettuces, larger leaves picked and torn, core cut into wedges
Tarragon dressing
- 2 tsp wholegrain mustard
- 1/2 bunch tarragon leaves, finely chopped
- 2 tbs each white balsamic vinegar and extra virgin olive oil
Don't forget you can add these ingredients to your Woolworths shopping list.

1.For the tarragon dressing, place all ingredients and 1 tsp salt flakes in a screw-top jar, seal and shake vigorously until well combined.

2.Set aside. Place sugar snap peas, asparagus and lettuce in a large serving bowl and toss well to combine. When ready to serve, pour over tarragon dressing, then season with freshly ground black pepper.
