Raw greens salad with tarragon dressing
Add a pop of fresh to any feast with this green mixed salad. It's all dressed to impresses with a delicious tarragon finish.

Ingredients (6)

  • 150g sugar snap peas, trimmed, strings removed, split open in half
  • 4 bunches asparagus, trimmed, peeled into thin strips (we used a mandoline)
  • 2 little gem lettuces, larger leaves picked and torn, core cut into wedges

Tarragon dressing

  • 2 tsp wholegrain mustard
  • 1/2 bunch tarragon leaves, finely chopped
  • 2 tbs each white balsamic vinegar and extra virgin olive oil

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    For the tarragon dressing, place all ingredients and 1 tsp salt flakes in a screw-top jar, seal and shake vigorously until well combined.
  • 2.
    Set aside. Place sugar snap peas, asparagus and lettuce in a large serving bowl and toss well to combine. When ready to serve, pour over tarragon dressing, then season with freshly ground black pepper.
