Put those overripe bananas, jar-ends of nut butter and winter’s porridge oats to work in this no-fuss coconutty treat.

Ingredients (13)

  • 3 cups (330g) coconut flour
  • 1 cup (90g) rolled oats
  • 100g vanilla protein powder
  • 1/4 cup (55g) raw sugar
  • 100g chopped nuts (we used walnuts)
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1/2 cup (140g) nut butter (we used almond)
  • 400ml coconut milk
  • 1 cup (250ml) maple syrup
  • 3 ripe bananas, mashed
  • 1 tbs vanilla extract
  • 2 cups (180g) desiccated coconut

Method

  • 1.
    Grease a 22cm square cake pan and line with baking paper.
  • 2.
    Combine flour, oats, protein powder, sugar, nuts and spices in a bowl. Place nut butter, coconut milk and maple syrup in a saucepan over medium heat and cook, stirring, until warm and combined. Stir in banana, vanilla and a pinch of salt. Add to flour mixture and stir to combine.
  • 3.
    Press mixture into prepared pan, scatter with coconut, then use a piece of baking paper to press coconut into the surface. Chill for 2 hours or until firm. Using a serrated knife, cut into bars. Store chilled, in an airtight container, for up to 2 weeks.
