No-bake protein banana bread bars
Put those overripe bananas, jar-ends of nut butter and winter’s porridge oats to work in this no-fuss coconutty treat.
Ingredients (13)
- 3 cups (330g) coconut flour
- 1 cup (90g) rolled oats
- 100g vanilla protein powder
- 1/4 cup (55g) raw sugar
- 100g chopped nuts (we used walnuts)
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 cup (140g) nut butter (we used almond)
- 400ml coconut milk
- 1 cup (250ml) maple syrup
- 3 ripe bananas, mashed
- 1 tbs vanilla extract
- 2 cups (180g) desiccated coconut
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Grease a 22cm square cake pan and line with baking paper.

2.Combine flour, oats, protein powder, sugar, nuts and spices in a bowl. Place nut butter, coconut milk and maple syrup in a saucepan over medium heat and cook, stirring, until warm and combined. Stir in banana, vanilla and a pinch of salt. Add to flour mixture and stir to combine.

3.Press mixture into prepared pan, scatter with coconut, then use a piece of baking paper to press coconut into the surface. Chill for 2 hours or until firm. Using a serrated knife, cut into bars. Store chilled, in an airtight container, for up to 2 weeks.
