Ingredients (8)
- 40ml ouzo (we used Plomari)
- 15ml white rum (we used Flor de Caña)
- 30ml cream of coconut (we used Coco Lopez)
- 30ml pineapple juice
- 15ml lime juice
- 10ml egg white (or 10ml aquafaba - the liquid from a can of chickpeas)
- Ice cubes, to chill, plus extra, to serve
- Pineapple leaf, to garnish

1.Pour all the ingredients into a cocktail shaker. Add ice and shake vigorously for 15 minutes, or until very frothy. Strain into a tall glass over ice. Garnish with a pineapple leaf.
