Oysters with macerated lemon
The perfect starter for a summer dinner party.
Ingredients (7)
- 2 lemons, peeled, remaining pith removed, segmented, finely chopped, plus juice of 1/2 a lemon, plus extra lemon wedges to serve
- 1/2 garlic clove, crushed
- 2 tsp caster sugar
- 1/2 bunch oregano, leaves picked
- 1/3 cup (80ml) extra virgin olive oil
- 16 freshly shucked oysters
- Rock salt, to serve

1.To make macerated lemon, combine segmented lemon, garlic, sugar, half the oregano and 1 tbs oil in a bowl. Cover and stand for 6 hours or overnight to macerate.

2.When ready to serve, using a mortar and pestle, pound a pinch of salt flakes and remaining oregano to a paste. Stir through lemon juice and remaining 1/4 cup (60ml) oil.

3.Arrange oysters on a rock-salt-covered platter and drizzle with a little oregano oil and macerated lemon. Serve immediately with remaining macerated lemon, oregano oil and extra lemon wedges.
