Give your Christmas Day a twist by serving panforte (an Italian dessert) alongside your traditional pudding. Add an espresso and a glass of dessert wine for unadulterated bliss.

Ingredients (14)

  • 100g blanched almonds, roasted, chopped
  • 100g hazelnuts, roasted, skins rubbed off
  • 100g (1/2 cup) glace pears, chopped
  • 100g (1/2 cup) glace apricots, chopped
  • 100g (1/2 cup) glace figs, chopped
  • 100g (2/3 cup) plain flour
  • 2 tablespoons good-quality cocoa powder, plus extra to dust
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 55g (1/4 cup) caster sugar
  • 1/2 cup honey
  • 100g good-quality dark chocolate, roughly chopped

Method

  • 1.
    Preheat oven to 150°C. Grease and line a round 20cm spring-form pan.
  • 2.
    Combine chopped nuts and glace fruits in a large bowl.
  • 3.
    Sift flour, cocoa and spices together. Add to the fruit and nut mixture and stir to combine. Place the caster sugar and honey in a small saucepan over low heat, stirring until the sugar dissolves. Bring to the boil then remove from the heat.

    Place the chocolate in a bowl over pan of simmering water until melted. Pour the melted chocolate and honey syrup into the fruit-and-nut mixture. Mix well. Spread the mixture into the pan and bake for 25-30 minutes. Set aside to cool completely in the pan.
  • 5.
    Once cool, dust with cocoa powder, slice and serve with dessert wine or port and some good coffee.
