If you're stuck for inspiration, try this easy pasta and beans dish that you can put together with just a few ingredients.

Ingredients (11)

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 2 pork and fennel sausages or regular good-quality pork sausages, casings removed
  • 1 tablespoon tomato paste
  • 400g can chopped tomatoes
  • 3 sage leaves, chopped, or 1/2 teaspoon dried sage
  • 1/2 cup (125ml) beef stock or water
  • 400g can cannellini beans, rinsed, drained
  • 250g ditalini (see note) or macaroni
  • Toasted crusty bread and grated parmesan, to serve

Method

  • 1.
    Heat oil in a large pan over medium heat. Cook onion for 2-3 minutes, stirring, until softened. Add garlic and cook for 1 minute, stirring, then add sausage meat and cook for 3-4 minutes, breaking up any lumps with a wooden spoon, until browned. Add tomato paste, chopped tomato, sage and stock, season, then simmer for 8-10 minutes, stirring occasionally, until slightly thickened. Stir in beans, then cool slightly.

    Meanwhile, cook the pasta according to packet instructions until al dente. Drain.
  • 3.
    Place 1 cup of the cooled sauce in a blender and whiz until smooth. Return to the pan with remaining sauce and cook over low heat, stirring, for 2-3 minutes to warm through, then stir in the pasta. Pile the pasta and sauce over slices of toasted bread, sprinkle with parmesan and serve.
