Pear, blue cheese and roast beef salad
The classic combination of blue cheese, roast beef and pears is showcased in this beautiful salad starter.

Ingredients (8)

  • Leaves from 2-3 heads baby cos lettuce (larger leaves torn)
  • 2 pears (such as William), cut into thin wedges
  • 2/3 cup pecans, toasted and roughly chopped
  • 325g thinly sliced rare roast beef*

Blue cheese dressing

  • 2/3 cup (160ml) thin cream
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2/3 cup (100g) crumbled hard blue cheese

Method

  • 1.
    For the dressing, whisk together cream, lemon juice and oil. Stir in cheese, being careful not to break up too much.
  • 2.
    Divide lettuce among 4 large shallow bowls. Top with pear, pecans and roast beef, then drizzle over the dressing.
