Piel de sapo, cucumber and ricotta salad
This light, tangy salad is the perfect accompaniment to your pizza night. Recipe by Luke Powell of Bella Brutta.
Ingredients (7)
- 1/2 piel de sapo melon (substitute honeydew), peeled, seeds removed, chopped
- 1/2 telegraph cucumber, thinly sliced
- 1/3 cup picked mint leaves
- 1 tbs runny honey
- 2 tbs chardonnay vinegar
- 2 tbs extra virgin olive oil
- 1/4 cup ricotta salata, crumbled

1.Combine melon, cucumber and mint leaves in a bowl. Whisk honey, vinegar and oil together in a second bowl and season with salt flakes and freshly ground black pepper. Gently toss dressing with melon mixture. Scatter ricotta on a serving plate and top with melon mixture.
