Pisco sour
Capture the essence of Peru in a glass with this classic cocktail featuring Pisco, the South American grape brandy.
Ingredients (5)
- 1/2 cup (110g) caster sugar
- 1/3 cup (80ml) lime juice
- 1 cup (250ml) Pisco (see note) (South American grape brandy)
- 1 eggwhite
- Angostura Aromatic Bitters, to taste

1.Place sugar and 1/3 cup (80ml) water in a small saucepan over medium heat. Bring to the boil, stirring, and cook until the sugar has dissolved. Remove from heat and set aside to cool slightly.

2.Pour the lime juice and Pisco into the warm sugar syrup and stir to combine. Pour the mixture into a blender with plenty of ice. Whiz on high speed for 30 seconds to crush the ice, then add eggwhite and blend on high speed for a further 30 seconds or until foamy.

3.Divide among 4 glasses, add 1-2 drops Angostura, or more to taste, and serve.
