"This nutty loaf cake really doesn’t need too much jazzing up; the pistachios speak for themselves! I like to amp up the flavour with a little bit of pistachio extract. If you can’t find it, you can also use almond extract. A note on baking with pistachios: the vibrant green colour you see comes from blanched slivered pistachios, as all of the brown-pink-purple skin has been removed. Even brighter again are Iranian pistachios, if you can source them." – Emelia Jackson

Ingredients (7)

  • 120g pistachios
  • 2 cups (240g) icing sugar, plus extra, to dust
  • 1 cup (100g) almond meal
  • 1/2 cup (75g) self-raising flour
  • 6 egg whites
  • 160g salted butter, melted
  • Finely grated zest of 1 lemon

Method

  • 1.
    Preheat oven to 200°C/180°C fan-forced. Grease a 24cm x 13cm, 6.5cm-deep loaf pan, line base and sides with baking paper.

    Roast the pistachios on a baking tray for 12-14 minutes until fragrant. Set aside to cool completely, then place in a food processor and whiz into a fine meal.
  • 3.
    Sift icing sugar into a large bowl. Add the almond meal, flour and pistachios and whisk to combine. Whisk the egg whites in another large bowl until frothy. Add the dry ingredients, butter and zest to egg whites and stir until combined. Pour into prepared pan and level surface.
  • 4.
    Bake for 50 minutes, covering top with a piece of foil if browning too quickly, or until deep golden and a skewer inserted into the centre comes out clean.
  • 5.
    Allow cake to cool in pan for 15 minutes before inverting onto a wire rack to cool completely. Dust the top liberally with extra icing sugar before serving.

Recipe Notes

You’ll need a 24cm x 13cm, 6.5cm-deep loaf pan. You can substitute the pistachios for any nut here; almonds or hazelnuts are my favourite as they carry the most flavour. If you want a vibrant green colour, you can add a drop or two of green food colouring.
