Ingredients (3)

  • 2 pontiac or desiree potatoes, peeled, sliced very thinly using a mandoline or sharp knife
  • Olive oil spray
  • About 12 flat-leaf parsely leaves

Method

  • 1.
    Preheat the oven to 180°C. Line a baking tray with baking paper. Place half the potatoes on the tray, spray with oil and season with salt and pepper. Top each slice with 1 parsley leaf, then lay another slice of potato on top of each. Spray with olive oil and season. Bake for 20-25 minutes until crisp.
