There's nothing that soothes quite like a good soup, especially when it starts to cool outside.

Ingredients (13)

  • 2 tbs sesame oil
  • 2 eschalots, thinly sliced
  • 4cm piece (20g) ginger, thinly sliced
  • 15cm piece lemongrass, white part only, halved lengthwise, bruised
  • 8 cups (2L) Massel Chicken Style Liquid Stock
  • 300g medium green king prawns, peeled (tails intact), deveined
  • 180g dried soba noodles
  • 2 tbs soy sauce
  • 1 tbs mirin
  • 1 tbs rice vinegar
  • 1 tsp sesame seeds
  • 1 long red chilli, thinly sliced
  • 2 long green shallots, thinly sliced

Method

  • 1.
    Heat sesame oil in a large saucepan over medium-high heat. Add the eschalots and ginger and cook, stirring, for 3-4 minutes until eschalots have softened. Add lemongrass and chicken stock and bring to the boil. Reduce heat to low and simmer for 35-40 minutes until infused.

    Add the prawns and cook for 2-3 minutes, then add the noodles, stirring frequently. Add the soy, mirin and vinegar. Divide soup among bowls and scatter with sesame seeds, chilli and long green shallot to serve.
