Luke Mangan reinvents this classic yum cha snack into a worthy dinner party starter. Try these tasty prawn toasts with chipotle mayo, they would sit perfectly with any Asian banquet.

Ingredients (14)

  • 1 cup (300g) mayonnaise
  • 2 tbs chipotle chillies in adobo sauce
  • 1 tbs lime juice
  • 6 slices white bread, crusts removed
  • 1/3 cup (50g) white sesame seeds
  • Sunflower oil, to deep-fry
  • Coriander leaves, to serve

Prawn Topping

  • 150g green prawn meat
  • 2 tbs finely grated ginger
  • 3 garlic cloves, chopped
  • 1 tsp caster sugar
  • 2 eggwhites
  • 2 tsp each sesame oil and fish sauce
  • 2 spring onions, chopped

Method

  • 1.
    Combine mayonnaise, chipotle and lime juice in a bowl. Chill until ready to serve.
  • 2.
    For topping, whiz prawn meat in a food processor until smooth. Add all remaining ingredients and whiz to combine. Spread prawn mixture over 1 side of bread. Place sesame seeds on a plate and press bread, prawn-side down, into seeds to coat.
  • 3.
    Heat 2cm oil in a heavy-based frypan over medium-high heat. In batches, add the toasts and cook, turning halfway, for 4 minutes or until golden. Drain on paper towel, then cut toasts in half.
  • 4.
    Serve prawn toasts with chipotle mayonnaise and coriander leaves.
