Prawns baked in salt with aioli

Ingredients (10)
- 1kg rock salt
- 6-8 thyme sprigs
- 20 large green prawns in the shell
- Lemon wedges, brown bread and butter, to serve
Aioli
- 2 garlic cloves
- 3 egg yolks
- 1/2 teaspoon Dijon mustard
- 1/4 cup (60ml) canola oil
- 1/2 cup (125ml) extra virgin olive oil
- 1 lemon, juiced

1.Preheat oven to 230°C.

2.Place a 3cm layer of salt in the base of a roasting pan and scatter with the thyme sprigs. Sit the prawns on top in a single layer, cover completely with the remaining salt and sprinkle with 2-3 tablespoons water. Bake in the oven for 25 minutes.

3.To make the aioli, place the garlic in a food processor with the egg yolks and Dijon mustard, and process to combine. While processing, slowly add the oils, lemon juice, and salt and pepper until combined. Serve with the prawns, lemon, bread and butter.
