Prawns with BLT mayonnaise.
Chilled prawns in summer? There's nothing better.
Ingredients (9)
- 2kg cooked prawns, peeled (tails intact), deveined
- Lemon wedges, to serve
BLT mayonnaise
- 4 (60g) smoky rindless bacon rashers
- 1 1/4 cups (375g) aioli
- 1 tbs sriracha
- 1 tbs HP sauce
- 1/4 bunch each finely chopped flat-leaf parsley and tarragon leaves
- 1 roma tomato, seeded, finely chopped
- 1 baby cos heart, very thinly sliced
Don't forget you can add these ingredients to your Woolworths shopping list.

1.For the mayo, heat a non-stick frypan over high heat. Add bacon and fry until crisp. Drain on paper towel. When bacon is cool, place in a food processor with aioli, sauces and herbs and blitz until combined. If too thick, add a little water and pulse until it reaches the desired consistency.

2.Transfer to a bowl, add tomato and baby cos, season to taste and stir to combine. Serve with prawns and lemon wedges.
