This drink by chef Jared Ingersoll is a play on the traditional lime-based mojito – I like the way the sour rhubarb is mixed with sugar and mint. To get the most vivid colour from your rhubarb, sugar it down the day before (there’s no difference in flavour).

Ingredients (7)

  • 2 large or 3 small rhubarb stalks
  • 2 tablespoons sugar
  • 4 mint leaves
  • 1/4 lime
  • Ice
  • 60ml (1/4 cup) white rum, such as anejo blanco
  • Splash of soda water (optional)

Method

  • 1.
    Thinly slice rhubarb and sprinkle with sugar. Let it sit overnight or go straight on to making your drink. Put rhubarb and mint in a cocktail shaker. Squeeze in lime juice and add the crushed lime wedge. Fill with ice to the top.

    Pour in rum and shake really, really well. Pour into a tall glass - if you need to top it up, add a splash of soda water to the cocktail shaker and wash any remaining cocktail into the glass. Serve straight away.
