Ingredients (8)

  • 8 scampi, halved, cleaned
  • 8 large green prawns
  • 8 scallops on the half shell
  • 1/4 cup (60ml) olive oil
  • 2 garlic cloves, finely chopped
  • Finely grated zest and juice of 1 lemon, plus lemon wedges to serve
  • 2 tablespoons chopped lemon thyme or thyme
  • 2 tablespoons chopped flat-leaf parsley

Method

  • 1.
    Preheat the oven to 200°C or the woodfired oven to 400°C.
  • 2.
    Place seafood in a large baking dish in a single layer. In a bowl, mix oil, garlic, zest, juice and thyme, then brush over seafood and season. Bake for 10 minutes (or in the centre of the woodfired oven for 5-7 minutes), until seafood is cooked. Scatter with parsley and serve with lemon wedges.
