Ingredients (5)

  • 125g raspberries
  • Finely grated zest & juice of 1 lemon & 1 lime
  • 2 tbs extra virgin olive oil
  • 300g sashimi-grade salmon, thinly sliced
  • Nasturtium leaves & flowers or other edible flowers (optional), to serve

Method

  • 1.
    Place half the raspberries in a bowl. Add lemon and lime zest and juice, and a pinch of salt flakes, then mash with a fork until well combined. Press mixture through a sieve set over a bowl, discarding solids. Add oil to juice mixture and whisk until well combined.
  • 2.
    Arrange salmon on a serving platter. Spoon over dressing, then scatter with remaining raspberries, nasturtium leaves and flowers, if using. Serve immediately.
