Salmon crudo with raspberries
Salmon with raspberries? Just trust us on this one. You'll be pleasantly surprised.
Ingredients (5)
- 125g raspberries
- Finely grated zest & juice of 1 lemon & 1 lime
- 2 tbs extra virgin olive oil
- 300g sashimi-grade salmon, thinly sliced
- Nasturtium leaves & flowers or other edible flowers (optional), to serve

1.Place half the raspberries in a bowl. Add lemon and lime zest and juice, and a pinch of salt flakes, then mash with a fork until well combined. Press mixture through a sieve set over a bowl, discarding solids. Add oil to juice mixture and whisk until well combined.

2.Arrange salmon on a serving platter. Spoon over dressing, then scatter with remaining raspberries, nasturtium leaves and flowers, if using. Serve immediately.
