Salmon with lime, paprika, cumin and coriander seeds
This recipe has been adapted from my most recent book, The Chef Gets Healthy, and it’s a regular when friends come around because it’s easy and super tasty, says Tobie.
Ingredients (5)
- 2 tsp each cumin & coriander seeds
- 2 tsp hot smoked paprika
- 2 tbs extra virgin olive oil, plus extra to brush
- 600g piece salmon fillet (skin on)
- 2 limes, halved
Don't forget you can add these ingredients to your Woolworths shopping list.
CloseMethod
-
1.Using a mortar and pestle, pound cumin and coriander seeds until finely ground. Stir through paprika and oil. Place salmon on a plate and rub marinade all over. Cover and chill for 30 minutes or overnight to marinate.
-
2.Heat a barbecue or chargrill pan to high heat.
-
3.Brush cut-side of lime halves with extra oil and grill, cut-side down, for 2 minutes or until grill marks appear. Brush salmon with extra oil and grill, skin-side down, for 7 minutes, then turn and grill for a further 2-3 minutes or until medium rare. Transfer salmon to a serving plate with limes and rest for 5 minutes before serving.
