Ingredients (8)

  • 1.5kg rock salt
  • 300ml apple cider vinegar
  • 8 medium-sized King Edward potatoes
  • 6 smoked bacon rashers, chopped
  • 80g unsalted butter
  • 1/3 cup dill sprigs
  • 1/4 cup chopped chives
  • 200g sour cream

Method

  • 1.
    Preheat the oven to 200°C.
  • 2.
    Combine rock salt and vinegar on a large baking tray. Loosely nestle potatoes in salt mixture and roast for 1 hour or until potatoes are tender when pierced with a sharp knife. Cool slightly.
  • 3.
    Meanwhile, place bacon and butter in a saucepan over medium-low heat and cook, stirring regularly, for 10 minutes or until fat renders from bacon. Season with freshly ground black pepper, then add half dill.
  • 4.
    Combine chives and sour cream in a bowl. Cut potatoes open and dollop with sour cream mixture. Serve drizzled with bacon butter and top with remaining dill.
