Salt and vinegar roast potatoes with bacon and dill butter
Next level salt and vinegar chips.
Ingredients (8)
- 1.5kg rock salt
- 300ml apple cider vinegar
- 8 medium-sized King Edward potatoes
- 6 smoked bacon rashers, chopped
- 80g unsalted butter
- 1/3 cup dill sprigs
- 1/4 cup chopped chives
- 200g sour cream

1.Preheat the oven to 200°C.

2.Combine rock salt and vinegar on a large baking tray. Loosely nestle potatoes in salt mixture and roast for 1 hour or until potatoes are tender when pierced with a sharp knife. Cool slightly.

3.Meanwhile, place bacon and butter in a saucepan over medium-low heat and cook, stirring regularly, for 10 minutes or until fat renders from bacon. Season with freshly ground black pepper, then add half dill.

4.Combine chives and sour cream in a bowl. Cut potatoes open and dollop with sour cream mixture. Serve drizzled with bacon butter and top with remaining dill.
