Savoury shortbread
Serve these bites with a cheese platter or top with smoked salmon and serve as a canapé.
Ingredients (6)
- 250g butter, softened
- 1 cup finely grated parmesan
- 2 cups plain flour
- ⅓ cup rice flour
- 1 tbs lemon thyme leaves
- ¼ tsp cayenne pepper

1.Preheat oven to 160°C. Line 3 baking trays with baking paper. Beat butter and parmesan in a bowl until light and creamy. Add flours, thyme and pepper. Stir well.

2.Halve dough and roll one portion out between 2 sheets of baking paper until 5 mm thick. Using a 6.5 cm round cutter, cut rounds from dough. Transfer to trays. Repeat with remaining portion. Sprinkle with salt and pepper. Bake for 15 minutes or until light golden and cooked through. Stand on trays for 10 minutes before transferring to a wire rack to cool.
