This Vietnamese classic packs flavour and nutrition, and can be prepped for later.

Ingredients (9)

  • 4 long white crusty bread rolls (or Vietnamese baguettes)
  • Good-quality store-bought chicken liver pâté, to spread
  • 2 cups shredded pre-cooked chicken
  • 2 Lebanese cucumbers, cut into wedges lengthwise
  • 2 red (Asian) eschalots, thinly sliced
  • 4 long green shallots, green part only, thinly sliced
  • 1/4 bunch coriander sprigs, leaves picked
  • Kewpie mayonnaise & pickled carrot, to serve
  • 2 long red chillies, thinly sliced, to serve

Method

  • 1.
    Split baguettes in half, lengthways, but don’t cut all the way through.
  • 2.
    Spread with the chicken pâté and add the shredded chicken. Add the cucumber, eschalot, long green shallot, drained pickled carrot, and coriander, and season to taste. Drizzle desired amount of Kewpie mayonnaise over each banh mi and scatter with chillies to serve.
