Smoked chicken and wild rice salad
Ingredients (14)
- 1 1/2 cups (300g) jasmine and wild rice blend
- 1/3 cup (80ml) mirin
- 2 tablespoons rice vinegar
- 1 tablespoon tamari or soy sauce
- 1/4 teaspoon sesame oil
- 1 tablespoon lime juice
- 1 small red chilli, seeded, finely chopped
- 1 telegraph cucumber, halved, sliced on the diagonal
- 2 (about 380g) smoked chicken breast fillets, finely shredded
- 1/4 cup chopped mint, plus extra leaves to garnish
- 1/4 cup chopped coriander, plus extra leaves to garnish
- 1 small red onion, very thinly sliced
- 1/2 cup chopped roasted peanuts
- Sweet chilli sauce and lettuce leaves (optional), to serve

1.Cook the rice according to packet instructions (approx 15 min). Drain, rinse in cold water, then drain again.

2.Place mirin, vinegar, tamari, oil, juice and chilli in a large bowl. Add cucumber, chicken, herbs, onion, peanuts, and rice and toss to combine. Serve with extra mint and coriander and sweet chilli, with lettuce leaves to wrap if desired.
