It's hard to resist these sticky, smoky pork ribs served with sweet mango salsa.

Ingredients (11)

  • 1/3 cup (80ml) good-quality barbecue sauce
  • 1 tbs tomato paste
  • 1/4 cup (60ml) apple cider vinegar
  • 2 tbs brown sugar
  • 1/2 cup (125ml) apple cider
  • 3 tsp smoked paprika (pimenton)
  • 3 garlic cloves, finely chopped
  • 1.5kg pork spare ribs
  • 1 mango, chopped
  • 1 red capsicum, chopped
  • 1 bunch coriander, leaves chopped

Method

  • 1.
    To make the marinade, combine the barbecue sauce, tomato paste, apple cider vinegar, sugar, paprika, garlic and 2 tsp sea salt in a bowl. Add ribs, turn to coat, then cover and chill for at least 2 hours.
  • 2.
    Preheat oven to 160°C. Drain the ribs, reserving the marinade. Place ribs in a large roasting pan, cover with foil and cook for 1 hour. Remove foil and increase heat to 200°C. Add 1/4 cup (60ml) water to the pan and baste the ribs with reserved marinade.
  • 3.
    Cook for a further 50 minutes, scraping the bottom of the roasting pan with a wooden spoon and basting the ribs with caramelised pan juices every 10-15 minutes.
  • 4.
    Meanwhile, place mango, capsicum and coriander in a bowl and toss to combine.
  • 5.
    Slice ribs, brush with any remaining pan juices and serve with mango salsa.
