If you’re using frozen prawns, ensure they have completely thawed before starting this recipe. For best results, defrost in the refrigerator overnight. If you’re short on time, you can also place frozen prawns in a colander under cold running water, tossing occasionally, for a few minutes. Or place in a container with cold water and salt for 30 minutes. These methods are safe, and faster if you decide to cook this at the last minute, and only have frozen prawns.

How do you know when prawns are cooked?

Prawns take roughly 5-6 minutes to cook over medium-high heat. You’ll know they’re ready when they turn an opaque pink hue and the tails curl into a ‘C’ shape. Overcooked prawns are tightly wound and look more like an ‘O’ shape. 

What ingredients you’ll need 

Spaghetti: This long, thin pasta shape is the perfect carrier to cling to the luscious sauce while adding texture. Similar shapes, like fettuccine or linguine, will also work well.  

Extra virgin olive oil: A culinary staple in Italian cuisine, extra virgin olive oil creates the bulk of the sauce to add body and a slight herbaceous flavour. 

Garlic: When fried in olive oil, garlic emits a beautiful nutty aroma while adding a slight bite. 

Long red chilli: The smoky, slightly sweet flavour adds a subtle heat without overpowering the delicate prawns. 

Green king prawns: This firm-fleshed variety has a moist, deeply savoury and slightly salty finish, adding bite and texture. 

Flat-leaf parsley leaves: As well as a pop of green, chopped parsley imparts freshness. The bright, peppery flavour helps to balance the richness of the olive oil and butter sauce.

Lemon: Like parsley, grated lemon zest adds a refreshing burst of citrus to lift the full-bodied sauce. 

Unsalted butter: When combined with olive oil and cooking water, butter turns the sauce slightly creamy in texture without the need for adding cream. 

How do you prepare prawns?

Preparing whole raw prawns is an easy process to master. It involves peeling off the shells and legs (leaving the tails intact), carefully deveining using a small sharp knife, and then butterflying by slicing in half lengthways and opening up to lay flat.

Like most seafood pasta dishes, this spaghetti with prawns will keep in the fridge for up to three days in an airtight container. However, it’s best enjoyed fresh.

Ingredients (8)

  • 400g La Molisana Pastifico Extra Di Lusso Spaghetti
  • 1/2 cup (125ml) extra virgin olive oil
  • 4 garlic cloves, sliced
  • 1 long red chilli, thinly sliced, plus extra sliced to serve
  • 20 large green king prawns, peeled, tails intact, deveined, butterflied
  • 1/4 bunch flat-leaf parsley leaves, finely chopped
  • Finely grated zest of 1 lemon, plus extra wedges to serve
  • 80g unsalted butter, chopped

Method

  • 1.
    Cook spaghetti in boiling, salted water according to packet instructions. Drain and reserve 2/3 cup (165ml) cooking water.
  • 2.
    Meanwhile, heat a large, deep, non-stick frypan over medium-high heat. Add the oil, garlic and chilli and cook, stirring frequently, for 2-3 minutes or until the garlic starts to go golden. Add the prawns and cook, tossing, for 5-6 minutes, or until prawns are cooked. Add the cooked spaghetti, parsley and zest, and toss well to combine. Add the reserved cooking water with the butter and toss some more until butter is melted. Season to taste. If the mixture is looking a little dry, add a little more water. The oil and water will create a creamy texture to the sauce.
  • 3.
    Serve scattered with extra sliced chilli, freshly ground black pepper and lemon wedges.
