Thanks to TikTok, Spam is back, and it's bigger than ever. For those who've missed all the Spam tricks and hacks currently flooding our FYPs, Matt Preston has shared an easy Spam fritter recipe that'll help you join the cultural zeitgeist.

Ingredients (11)

  • ½ x 340g can Spam, finely chopped
  • 2 corn cobs, kernel removed
  • ⅔ cup (100g) cornflour
  • ⅔ cup (100g) glutinous rice flour
  • ⅔ cup (160ml) milk
  • 1 tbs vegetable oil
  • ¼ cup (60ml) tonkatsu sauce
  • ¼ cup (75g) Kewpie mayonnaise
  • 2 long green shallots, thinly sliced
  • Furikake (Japanese rice seasoning, from Asian grocers), to sprinkle
  • 1 avocado, cut into wedges

Method

  • 1.
    Combine Spam, corn, flours and milk in a large bowl and stir until well combined. Add an extra 1-2 tbs milk if mixture is too dry.
  • 2.
    Heat 1 tsp oil in a small non-stick frypan over medium heat. Spoon one-quarter of mixture into pan and spread until ½-cm thick. Cook for 4-5 minutes, until golden and crispy. Flip and cook for 1-2 minutes. Arrange on a plate and cover to keep warm. Repeat with remaining mixture to make 4 fritters.

    To serve, drizzle fritters with tonkatsu sauce, then with mayonnaise. Sprinkle with shallot and furikake and serve with avocado wedges.
