Spicy watermelon Tommy's margarita

This might just be the perfect summer cocktail. Make a big batch (and serve it in a hollowed out watermelon for a kitsch touch) and get the party started!

Ingredients (10)

  • 400ml tequila
  • 2 jalapeño chillies, halved, seeded, roughly chopped
  • 75ml agave syrup
  • 100ml orange curaçao
  • 20g black tea leaves
  • 1/2 watermelon
  • 300ml lemonade
  • Crushed ice, to serve
  • 1 bunch coriander, sprigs picked, to serve
  • 2 limes, sliced, to serve

Method

  • 1.
    Combine jalapeno with the tequila, agave syrup, curaçao and black tea leaves in a sealable container. Refrigerate overnight. Strain and bottle, until ready to serve.
  • 2.
    Scrape the pink flesh out of the watermelon. Juice the flesh (you’ll need 700ml juice). Set aside the hollowed-out rind for the bowl if you wish.
  • 3.
    To serve, combine 700ml watermelon juice and the spiced tequila in a punch bowl or the hollowed out watermelon if using. Top with crushed ice, lime slices and coriander sprigs.
