We’ve transformed a classic dessert into the shape of a cookie! Easy to make and even easier to devour, you can enjoy these sticky date pudding-inspired cookies warm with an oozy soft centered caramel or cooled with chunks or chewy caramel. Both experiences are amazing.
Ingredients (10)
- 150g salted butter, softened
- 1/2 firmly packed cup (125g) dark brown sugar
- 1/3 cup (75g) caster sugar
- 1 large egg
- 2 cups (300g) plain flour
- 1/2 tsp ground cinnamon
- 1/2 tsp bicarb soda
- 1/2 tsp baking powder
- 270g medjool dates, seeded, chopped (you’ll need about 18)
- 135g pkt Werther’s Original Chewy Toffees, halved (you’ll need 20 lollies)

1.Beat the butter, sugars and egg in the bowl of a stand mixer fitted with the paddle attachment until well combined. Sift over the flour, cinnamon, bicarb and baking powder, then slowly mix until just combined. Add dates and slowly mix until just combined. Chill for 2 hours or overnight if time allows for the flavours to develop.

2.When ready to bake, preheat the oven to 200°C/180°C fan-forced. Line 2 baking trays with baking paper.

3.Roll 2 tablespoon-measures of cookie dough into a ball, pressing 2 half toffees into the ball until fully enclosed in the dough. Repeat with remaining dough and toffees to make 20 balls. Place on prepared trays, spacing them 4cm apart. Press down on each ball until about 2cm thick, then bake for 15 minutes or until golden. Cool slightly on trays. Serve warm or cooled.
