Sticky Thai beef and pineapple stir-fry

What boy kibble COULD be, if they used a delicious. recipe.
This easy Thai-inspired stir-fry is sweet and savoury with a fresh zingy salsa, which you can make as hot as you like, depending on how much chilli you want to use! We used green beans and snow peas, but you can use whichever vegies are in season.
Ingredients (14)
- 1/2 large ripe pineapple, peeled, cored
- 1 tbs vegetable oil
- 500g beef mince
- 2 tbs garlic and ginger paste (see recipe notes)
- 2 tbs brown sugar
- 2 tbs fish sauce
- 200g green beans, trimmed, cut into 3cm lengths
- 100g snow peas, trimmed
- 1/4 cup finely chopped coriander, plus extra springs, to serve
- 1/4 cup finely chopped mint leaves, plus extra leaves, to serve
- 1 long green shallot, thinly sliced
- 1 long green chilli, thinly sliced (see recipe notes)
- 1/4 cup (60ml) lime juice
- Steamed jasmine rice, to serve

1.Cut half the pineapple into bite-sized chunks and finely chop the remaining half, keeping both separate.

2.Heat the oil in a large frypan or wok over high heat. Add the beef and cook, without stirring, for 2 minutes to start browning. Then cook, stirring to break up the mince, for another 2 minutes. Add larger chunks of pineapple, garlic and ginger paste, sugar and fish sauce and cook, stirring occasionally for another 3-4 minutes, until well browned. Add beans and snow peas and cook, tossing occasionally, for 2-3 minutes, until snow peas are bright green.

3.Meanwhile, place finely chopped pineapple, herbs, shallot, chilli and 2 tbs lime juice in a medium bowl. Season with salt flakes and freshly ground black pepper and toss to combine.

4.Add remaining 1 tbs lime juice to the mince, toss and check seasoning. Serve over rice with a little pineapple salsa and extra herbs.
Recipe Notes
You can buy jars of mixed garlic and ginger paste, or use 1 tbs of each if you have separate jars. Keep the chilli separate to sprinkle over each serve if some don’t like it hot.
