Sticky tofu noodles with coconut and lime
This recipe is a fast weeknight meal with big flavour and punch.
Ingredients (10)
- 2 tbs peanut or sunflower oil
- 500g firm tofu, cut into 3cm pieces
- 1/3 cup (100g) good-quality laksa paste
- 100ml coconut cream
- 2 tsp fish sauce
- Juice of 1 lime, plus charred lime halves to serve
- 250g pad Thai rice noodles, cooked according to packet instructions
- 150g snow peas, blanched, shredded
- 1/2 bunch spring onion, sliced on an angle
- Bean sprouts & sliced long red chilli, to serve

1.Heat oil in a frypan over medium heat. Coat tofu with laksa paste, then cook, turning, for 4-5 minutes until golden. Remove and set aside, reserving oil.

2.Combine coconut cream, fish sauce and lime juice, and toss with noodles to coat.

3.Divide noodles, tofu and all remaining ingredients between bowls. Drizzle with reserved oil and serve with charred lime.
