This recipe is a fast weeknight meal with big flavour and punch.

Ingredients (10)

  • 2 tbs peanut or sunflower oil
  • 500g firm tofu, cut into 3cm pieces
  • 1/3 cup (100g) good-quality laksa paste
  • 100ml coconut cream
  • 2 tsp fish sauce
  • Juice of 1 lime, plus charred lime halves to serve
  • 250g pad Thai rice noodles, cooked according to packet instructions
  • 150g snow peas, blanched, shredded
  • 1/2 bunch spring onion, sliced on an angle
  • Bean sprouts & sliced long red chilli, to serve

Method

  • 1.
    Heat oil in a frypan over medium heat. Coat tofu with laksa paste, then cook, turning, for 4-5 minutes until golden. Remove and set aside, reserving oil.
  • 2.
    Combine coconut cream, fish sauce and lime juice, and toss with noodles to coat.
  • 3.
    Divide noodles, tofu and all remaining ingredients between bowls. Drizzle with reserved oil and serve with charred lime.
