Recreate the fresh flavours of Thai cuisine in this easy green vegetable fried rice dish.

Ingredients (10)

  • 300g jasmine rice
  • 2 tablespoons sunflower oil
  • 1 tablespoon good-quality Thai green curry paste
  • 6 spring onions, thinly sliced on an angle
  • 2 garlic cloves, crushed
  • 100g snake beans or green beans, cut into 4cm lengths
  • 1 bunch thin asparagus, trimmed, cut into 4cm lengths
  • 1 zucchini, cut into matchsticks
  • 1 tablespoon fish sauce
  • 1 cup Thai basil leaves

Method

  • 1.
    Cook rice in boiling salted water over medium heat for 10 minutes or until just cooked. Cool.
  • 2.
    Heat oil in a wok over medium-high heat. Add curry paste and stir-fry for 1 minute until fragrant. Add onion, garlic, beans, asparagus and zucchini and stir-fry for 1-2 minutes until tender. Stir in rice, fish sauce and basil until heated through.
