Summer pudding French toast
If you love summer pudding, this French toast is a must try! It has all the flavours with none of the hassle.

Ingredients (12)

  • 1/2 cup caster sugar, plus 2 tablespoons extra
  • 250g raspberries
  • 1 tablespoon Grand Marnier
  • 150g blueberries
  • 150g strawberries
  • 150g blackberries
  • 4 eggs
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 6 slices of good-quality bread
  • A little unsalted butter
  • Icing sugar, to dust

Method

  • 1.
    Place 1/2 cup caster sugar and 1/2 cup water in a saucepan and bring to the boil, stirring, for 2 minutes. Remove from heat and set aside to cool. Place in a blender with 100g raspberries and whiz until a smooth puree. Strain and discard seeds. Transfer to a bowl with Grand Marnier and remaining berries. Toss to combine.

    Beat together eggs, vanilla, cinnamon and the extra caster sugar in a bowl.

    Brush a non-stick pan with butter and heat over medium heat. Dip bread in egg mixture, and cook in 3 batches until each slice is golden. Serve with the berries and dust with icing sugar.
