Oozy Taleggio makes for the ultimate cheesy pizza, while thin potato slices bring a double-carb hit.

Ingredients (7)

  • 1 bunch rosemary, leaves finely chopped
  • 1 bunch thyme, leaves finely chopped
  • 2 garlic cloves, finely chopped
  • 1/2 cup (125ml) extra virgin olive oil, plus extra to serve (optional)
  • 2 x 26cm good-quality, ready-made pizza bases
  • 2 desiree potatoes, skin on, very thinly sliced (a mandoline is ideal)
  • 200g Taleggio or other soft washed-rind cheese, torn

Method

  • 1.
    Preheat the oven to 220°C. Line 2 large baking trays with baking paper.
  • 2.
    Place the rosemary, thyme, garlic and extra virgin olive oil in a bowl, season and stir to combine. Place pizza bases on the baking trays and brush with the herb oil. Arrange the potato slices in a single layer on top, brush with more herb oil and scatter over pieces of Taleggio. Season with a little sea salt. Bake the pizzas for 15-20 minutes until the potato is golden and tender and the bases are crisp and golden.

    Drizzle pizzas with extra virgin olive oil, if desired, cut into slices and serve.
