Thai chicken platter
Have some weeknight dinner fun with this delicious DIY Thai chicken platter.

Ingredients (14)

  • 1 red onion
  • 1 tablespoon each sunflower oil and sesame oil
  • 1 lemongrass stem (pale part only), finely chopped
  • 1 long red chilli, seeds removed, finely chopped
  • 3 garlic cloves, crushed
  • 2cm piece ginger, grated
  • 4 kaffir lime leaves, finely shredded
  • 800g chicken mince
  • 1/3 cup (80ml) fish sauce
  • 1 tablespoon sweet chilli sauce, plus extra to serve
  • 1/4 cup (60ml) lime juice
  • 2 teaspoons brown sugar
  • 1 cup each chopped mint and coriander
  • Baby cos lettuce leaves, cucumber batons, fried wonton wrappers (optional), lime wedges and steamed rice, to serve

Method

    Thinly slice half the onion and set aside. Finely chop remaining onion. Heat oils in a wok over medium-high heat, then add chopped onion, oils, lemongrass, chilli, garlic, ginger and lime leaves. Stir-fry for 1 minute until fragrant. Add mince and stir-fry for 5 minutes or until almost cooked. Add sauces, lime juice and sugar, then stir-fry for a further minute until chicken is cooked through and sauce is reduced. Stir through sliced onion and herbs. Transfer to a platter and serve with the remaining ingredients, scooping chicken mixture into lettuce or onto wonton wrappers.
