The Fig Old Fashioned
Fig season is now well and truly upon us now. And what better way to celebrate then with a drink in hand (especially one that celebrates the flavour of the fruit). Sydney's harbourside Catalina is evidently a fan of the fig, with the restaurant developing a fig old fashioned as a part of its limited-edition new cocktail menu.
Ingredients (8)
- 1 dash Angostura Bitters
- 1 dash Orange Bitters
- 60ml fig-infused Maker's Mark
- 10ml sugar syrup
Fig-infused Maker's Mark
- 10 dashes Angostura Bitters
- 10 dashes Orange Bitters
- 500g raw fig
- 1 bottle Maker's Mark

1.Cut 300g of fresh figs per one bag of Maker's Mark bourbon.

2.Combine all of the ingredients in a vacuum-sealed bag and place in a sous-vide at 60 ° for 3 hours. Then remove and chill.

3.Combine 60ml of chilled fig bourbon, 10ml sugar syrup and 1 dash of each type of Bitters in a chilled mixing glass with ice.

4.Stir to desired taste and serve on the rocks.
