Fig season is now well and truly upon us now. And what better way to celebrate then with a drink in hand (especially one that celebrates the flavour of the fruit). Sydney's harbourside Catalina is evidently a fan of the fig, with the restaurant developing a fig old fashioned as a part of its limited-edition new cocktail menu.

Ingredients (8)

  • 1 dash Angostura Bitters
  • 1 dash Orange Bitters
  • 60ml fig-infused Maker's Mark
  • 10ml sugar syrup

Fig-infused Maker's Mark

  • 10 dashes Angostura Bitters
  • 10 dashes Orange Bitters
  • 500g raw fig
  • 1 bottle Maker's Mark

Method

  • 1.
    Cut 300g of fresh figs per one bag of Maker's Mark bourbon.
  • 2.
    Combine all of the ingredients in a vacuum-sealed bag and place in a sous-vide at 60 ° for 3 hours. Then remove and chill.
  • 3.
    Combine 60ml of chilled fig bourbon, 10ml sugar syrup and 1 dash of each type of Bitters in a chilled mixing glass with ice.
  • 4.
    Stir to desired taste and serve on the rocks.
