Top-class gravy
Add an extra-special touch with homemade sauce – perfect with your meat.
Ingredients (12)
- 2 tbs olive oil
- 2 chopped bacon rashers
- 4 chicken wings
- 2 chopped celery stalks
- 2 chopped carrots
- 2 chopped brown onions
- 6 thyme sprigs
- 4 rosemary sprigs
- 1/4 cup plain flour
- 4 cups hot water
- 1/4 cup port
- 1 tbs cranberry sauce

1.Heat 2 tbs olive oil in a frying pan over medium-high heat. Add 2 chopped bacon rashers and cook for 2 minutes. Divide 4 chicken wings at the joints and add to pan. Cook for a further 5 minutes until golden. Add 2 chopped celery stalks, 2 chopped carrots, 2 chopped brown onions, 6 thyme sprigs and 4 rosemary sprigs. Reduce heat to medium-low and cook, stirring, occasionally, for 40 minutes, adding a little water if necessary. Mash vegetables slightly. Sprinkle 1/4 cup plain flour into pan. Cook stirring for 5-8 minutes. Gradually stir in 4 cups hot water. Increase heat and bring to the boil. Cook for 10 minutes or until thickened. Add 1/4 cup port and 1 tbs cranberry sauce. Reduce heat. Simmer for 15 minutes. Strain. Transfer to a jug.
