Turkey tonnato
This turkey tonnato makes for easy entertaining as guests help themselves to beautifully dressed, slice turkey.

Ingredients (11)

  • Cold roast turkey, sliced
  • Handful of baby rocket leaves
  • 1 tablespoon salted capers, rinsed, drained
  • 2 tablespoons diced mustard fruits

Tonnato sauce

  • 125g canned good-quality tuna in oil
  • 3 anchovy fillets
  • 1 tablespoon lemon juice
  • 2-3 tablespoons chicken or vegetable stock
  • 1 teaspoon horseradish cream or relish
  • 1 tablespoon salted capers, rinsed, drained
  • 180g good-quality whole egg mayonnaise

Method

  • 1.
    To make the tonnato sauce, puree the tuna, anchovies, lemon juice, stock, horseradish and capers in a blender or food processor. Add the mayonnaise and pulse to combine. The sauce should be a thick, pouring consistency. Pour into a jug or bowl and refrigerate until required.

    Arrange the turkey slices on a platter, then pour or spoon the tonnato sauce over the slices. Scatter with a few baby rocket leaves, the drained capers and diced mustard fruits, then serve.
