This turkey tonnato makes for easy entertaining as guests help themselves to beautifully dressed, slice turkey.
Ingredients (11)
- Cold roast turkey, sliced
- Handful of baby rocket leaves
- 1 tablespoon salted capers, rinsed, drained
- 2 tablespoons diced mustard fruits
Tonnato sauce
- 125g canned good-quality tuna in oil
- 3 anchovy fillets
- 1 tablespoon lemon juice
- 2-3 tablespoons chicken or vegetable stock
- 1 teaspoon horseradish cream or relish
- 1 tablespoon salted capers, rinsed, drained
- 180g good-quality whole egg mayonnaise

1.To make the tonnato sauce, puree the tuna, anchovies, lemon juice, stock, horseradish and capers in a blender or food processor. Add the mayonnaise and pulse to combine. The sauce should be a thick, pouring consistency. Pour into a jug or bowl and refrigerate until required.

2.Arrange the turkey slices on a platter, then pour or spoon the tonnato sauce over the slices. Scatter with a few baby rocket leaves, the drained capers and diced mustard fruits, then serve.
