Introducing your Dad's new BFF - it's a little crazy but completely delicious.

Ingredients (7)

  • 2L (8 cups) beer (we used lager)
  • 1L vanilla ice cream

Peanut, chilli and salt praline

  • 1 cup (220g) caster sugar
  • 2 tbs water
  • 1/2 cup (75g) roasted unsalted peanuts, chopped
  • 4 bird's eye chillies, thinly sliced
  • 1 tsp salt flakes

Method

  • 1.
    For the praline combine the sugar and water in a small saucepan over medium heat, stirring until sugar has dissolved. Cook for 8 minutes or until golden.
  • 2.
    Meanwhile line a baking tray with greaseproof baking paper. When the caramel is dark golden, remove from heat and add 3/4 of the peanuts and chilli then stir to combine using a heatproof spatula and pour onto the baking paper.
  • 3.
    Spread evenly and top with remaining peanuts, chilli and sprinkle with salt. Cool completely then break into shards.
  • 4.
    For the soft serve, place the ice cream into the bowl of a stand mixer with the whisk attachment and whisk until smooth. Place in a large piping bag fitted with a large nozzle.
  • 5.
    Pour beers into large stein glasses leaving about 2cm before the top. Pipe the ice cream onto the top of the beers then decorate with shards of praline.
