Apple and golden syrup crepes

Satisfy your sweet tooth with these vanilla crepes with spiced apples.
Ingredients (11)
- 4 (450g) apples, peeled and chopped
- 1/2 tsp ground cardamom
- 1/4 cup (90g) golden syrup, plus extra to serve
- 1 cup (150g) plain flour, sifted
- 2 tbs caster sugar
- 1 1/4 cups (310ml) milk
- 2 eggs, lightly beaten
- 1 tsp vanilla extract
- 40g unsalted butter, melted and cooled, plus extra to brush
- 2 cups (500g) Greek yoghurt
- 1/4 cup (35g) slivered pistachios

1.To make the spiced apple, place apple, cardamom and golden syrup in a small saucepan over medium-low heat. Cook for 15-20 minutes, stirring occasionally, until apple is soft. Set aside.

2.In a large mixing bowl whisk together the flour and sugar. Make a well in the centre and add the milk, eggs, vanilla and butter, and whisk until smooth. Set aside for 20 minutes to rest.

3.Heat a non-stick crepe pan or frypan over medium-low heat and brush with butter. Add 1/2 cup of batter to the pan and cook for 1-2 minutes on each side until golden and cooked. Keep warm while you continue with the remaining batter.

4.Divide yoghurt and apple among crepes, then fold to create a triangle. Sprinkle with pistachios and drizzle with extra golden syrup to serve.
