Sparkling watermelon and basil mojito
The beloved mojito gets an Aussie summer makeover. You’ll need 2L and 3L jugs for this recipe.
Ingredients (7)
- 400ml dark rum
- 2 tbs caster sugar
- 3 limes, quartered, plus extra slices, to serve
- 400g watermelon, peeled, roughly chopped, plus extra wedges, to serve
- 1/2 cup loosely packed basil leaves, plus extra sprigs, to serve
- Ice cubes, to serve
- 2 cups (500ml) chilled mineral water
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Place rum, caster sugar, lime, watermelon and basil leaves in a 2L jug and, using a small rolling pin, muddle ingredients until combined. Strain mixture through a fine sieve, extracting as much of the liquid as possible. Discard solids.

2.Transfer mojito to a 3L jug and half-fill with ice. Add mineral water and garnish with extra lime slices, watermelon wedges and basil sprigs.
