The classic Italian dessert gets an elegant twist in this delicious affogato recipe. Swap an espresso shot with silky swirls of whipped coffee to sit on top of velvety-smooth vanilla ice-cream, topped with drizzles of chocolate sauce to balance the sharp, sweet flavours. Super-easy to make, this two-step recipe makes the ultimate adults-only dessert when you're entertaining.

Recipe note: You’ll need a piping bag with a 1cm opening.

  • Vanilla ice cream, to serve
  • Chocolate sauce, to drizzle

Whipped coffee

  • 1/2 cup (40g) instant coffee granules
  • 1/2 cup (110g) caster sugar
  • 1/2 cup (125ml) boiling water

Method

  • 1.
    For the whipped coffee, place all ingredients in a stand mixer fitted with the whisk attachment and whisk on high speed for 4-5 minutes, until doubled in size and fluffy. Transfer to a piping bag with a 1cm opening.
  • 2.
    To assemble, layer scoops of ice cream in 6 serving glasses and drizzle with chocolate sauce. Pipe swirls of whipped coffee on top and serve with extra chocolate sauce alongside.
