And, it offers a bottomless fries menu.

Perth is having a moment. Between the Ritz-Carlton opening in November and a throng of new hotels and restaurants cropping up around the city this year, we think this Western Australian city is one to keep your hungry, design-loving eyes on.

And now, set to open in October inside the sophisticated new Art Series Hotel, The Adnate, is the utterly chic Hyde Kitchen + Cocktails.

A joint venture between international hospitality group sbe and Accor, Hyde Kitchen + Cocktails will bring with it an outdoor pool, sun loungers and DJ decks – in time for summer soirees. The relaxed venue will feature entertainment by night, and be a go-to for leisurely lunches by day.

If the name ‘Hyde’ sounds familiar, you may be acquainted with the brand’s well-known, celebrity-attracting Los Angeles, Las Vegas, Miami and now Gold Coast venues.

Interiors at the new Hyde are the work of designer Carlie Milosevic (the creative brain behind Hacienda Sydney’s look), who was also responsible for the sophisticated and laid-back design of the Gold Coasts’ Hyde Paradiso, which opened earlier this year. Milosevic has taken inspiration from Perth’s pastel sunsets and beaches in her colour scheme.

Tim Philips-Johansson of Sweet&Chilli has curated a ‘fun and flavoursome’ drinks menu, to be revealed at opening. As for food, expect to sample street-food snacks, alongside hearty mains, pizzas and a bottomless fries menu. Chef Danny Sanchez is on the pans and has created a menu that reflects both is Peruvian heritage and world travels.
