Heads up hedonists: The Morrison Oyster Festival is bringing bougie back to Sydney icon The Morrison Bar & Oyster Room this October, and it’s the ideal place to be a little shellfish and embrace your indulgent side this month.
Helmed by culinary director (and self-confessed oyster obsessive) Sean Connolly, the festival gives oyster lovers a chance to savour everyon’e favourite aphrodisiac snack with an exclusive, specially designed oyster menu, designed to which celebrate the unique, complex flavours of Australian bivalves.

Now in its 8th year, the critically acclaimed festival celebrates swoon-worthy recipe faves alongside innovative new flavour creations, including:
- The Million Dollar Oyster, topped with snow crab meat, Avruga cavier and chives
- Chicken fried po’ boy with oyster mayonnaise on a milk bun
- Oysters served with your choice of kimchi vinaigrette, fermented chilli XO sauce, horseradish crème frâiche or Tanqueray gin and tonic
“This will be our eighth year running, with the humble oyster being one of my favourite foods… it’s an honour to work with such fantastic local produce,” said The Morrison Bar & Oyster Room’s culinary director, Sean Connolly.

Get shucked at the signature $1.50 Oyster Hour, from 6.00pm to 7.00pm each day throughout the month of October. The sought-after event is a foodie fave, though, so you’ll want to arrive early or book a reservation in the dining room.
Each weekend, Oysters & Bottomless Bubbles will return, with two hours of Australian sparkling wine and a dozen freshly shucked oysters from $55.00 per person. *Swoon.*
New to the festival this year is the Oyster & Wine Flight, which features two Sydney rock oysters, a Pacific rock oyster and lavish wine pairings to boot.
The Morrison Bar & Oyster Room’s annual Oyster Festival commences today Thursday 1st October and runs until Saturday 31st October.
