Gin tastings in Sydney are a dime a dozen at the moment, but a gin tasting that comes with its own perfume masterclass? Now, that’s something you don’t see everyday.  And, while we might already be suffering from nonstop bouts of hayfever (thanks Sydney jacaranda season), it’s something that we’re definitely willing to pop a few extra Claritin for.

Spring has sprung and Sydney speakeasy Employees Only is celebrating with a gin cocktail flight, perfume masterclass and four-course degustation event. But here’s the real tea: they’re teaming up with iconic Australian distillery Four Pillars Gin to do it.

The venue will undergo a complete transformation to become the perfect spring setting; and, although we can already feel a sneezing fit coming on, we will be there, dammit!

Gin lovers will get a chance to taste Four Pillars’ unique craft gins, along with some brand new flavours like their Olive Oil, Navy strength and Spiced Negroni gin.

Four Pillars expert-slash-ambassador Hannah Torley will be your guide and there’s a stack of fresh gin cocktails to try, created by EO bartender Christine Lam and topped off with seasonally appropriate floral garnishes (hence: the antihistamines.)

The new cocktails include a Spiced Velvet Negroni and Secret Crush cocktail made with the distillery’s Bloody Shiraz gin, so if you haven’t yet managed to get your hands on a bottle, then now’s your chance to do so.

While you sip your way through the aforementioned cocktails, you’ll also be guided through a masterclass in high-end fragrances by perfumiers Goldfield & Banks.

And if that’s not enough excitement for you already, there’s also a four-course degustation menu , which includes seared spring lamb with chimichurri and a Belgian chocolate tart. *swoon*
