Three Blue Ducks set to open in the Southern Highlands on 600-acre farm

A new era of dining is coming to the Southern Highlands.

It’s official. Three Blue Ducks is coming to New South Wales’ Southern Highlands this year. The new venue will be located on Burradoo Park Farm, a 600-acre working regenerative farm, education precinct and farm-to-table hospitality destination, that’s coveniently just a five-minute drive from Bowral’s town centre.

Three Blue Ducks will open, not one, but three venues on Burradoo Park Farm. As each venue will operate within Burradoo, each of the venue’s menus will be shaped by what the farm produces, when it produces it, ensuring that food offerings reflect the season and the realities of regenerative agriculture. 

Former Quay co-head chef Troy Crisante has just been announced as group executive chef, working closely with the Three Blue Ducks across all venues on site. The respected chef rose through the ranks at Quay and sister venue Bennelong to work alongside the legendary Peter Gilmore, as well as alongside Lennox Hastie at Firedoor and Australian expat Brett Graham at his three-Michelin-starred The Ledbury in London.

Crisante and his team will have to work with what the Burradoo produces. Thankfully, Burradoo will support a diverse agricultural system that includes cattle, sheep, a market garden, a cut-flower garden and orchard featuring a wide variety of fruit trees. Crisante will tap into his Italian heritage with a program of house-cured meats, with smoked Burradoo Park beef and new-season lamb already leaked in menu previews.

The signature dining venue will be Three Blue Ducks, Burradoo. A produce-first, seasonal experience that is elevated by approachable. Dishes will incorporate what is grown and raised on-site and complemented by local produce. 

The Bakehouse by Three Blue Ducks will be Burradoo’s on-site sourdough-led bakery. Think everyday sourdough staples for locals and visitors alike, alongside seasonal creations inspired by what is being harvested from Burradoo. 

Last but not least will be The Farmhouse by Three Blue Ducks. Laidback cafe meets produce store, The Farmhouse will operate as a community hub showcasing the Farm’s produce next to goods from regional growers and makers.

Each of the three venues will showcase a multi-layered food experience that is designed to connect farming, cooking and community. Burradoo Park Farm is so much more than a new dining spot. Visitors can enjoy guided farm tours, local markets, workshops, school programs and hands-on sustainability experiences focused on soil health, food systems, renewable energy, insects and waste.It will also run an education program with the Stephanie Alexander Garden Foundation, which will provide primary school children with engaging, practical food education. This includes the purpose-built kitchen garden, which is ready to welcome its first students in Term Two.

Burradoo Park Farm will open to guests in stages from the first week of April, just in time for the Easter long weekend. Opening dates and times will be shared on the Burradoo Park Farm website and socials, with dining venue opening times and reservations on the Three Blue Ducks website
